Obrana potravin se mus\u00ed tak\u00e9 odli\u0161ovat od... <a href=\"#food-fraud\">potravinov\u00e9 podvody<\/a>, kde jsou ekonomick\u00e9 motivy prvo\u0159ad\u00e9.<\/p>\n<p>Z\u00e1kladem je anal\u00fdza hrozeb (\u010dasto ozna\u010dovan\u00e1 jako TACCP \u2013 Threat Assessment Critical Control Points). Na jej\u00edm z\u00e1klad\u011b jsou definov\u00e1na ochrann\u00e1 opat\u0159en\u00ed, jako jsou kontroly p\u0159\u00edstupu, \u0159\u00edzen\u00ed n\u00e1v\u0161t\u011bvn\u00edk\u016f, ut\u011bsn\u011bn\u00ed n\u00e1dr\u017e\u00ed a p\u0159epravn\u00edch prost\u0159edk\u016f, ochrana citliv\u00fdch oblast\u00ed, \u0161kolen\u00ed zam\u011bstnanc\u016f a opat\u0159en\u00ed, kter\u00e1 je t\u0159eba podniknout v p\u0159\u00edpad\u011b podez\u0159el\u00fdch pozorov\u00e1n\u00ed.
