Welcome to e-learning: LMHV § 4 training

In this E-learning course, you will learn what to look out for when handling food in order to comply with the law and to handle food hygienically. 

The basis for this training are the following laws:

  • § 4 Food Hygiene Ordinance (LMHV)
  • Regulation (EC) 852/2004 

The content depends on the Specifications of the IHK training for LMHV § 4.
We cover the following topics:

  1. Legal basis: EU law and German law
  2. Properties and composition of food
  3. Food Hazards: Microbiological, chemical, physical, allergenic
  4. Hygienic requirements for the production and processing of the respective food: raw material hygiene, processing hygiene, room and plant hygiene, personnel hygiene, product hygiene, disposal hygiene
  5. Self-checks, emergency plan, traceability, reserve samples, temperature measurement, sampling and examination
  6. Integrated: Examples
